Zucchini Lasagna: Put your garden vegetables to good use

20 ounces zucchini
1 pound ground beef
1.5 cups shredded mozzarella cheese
¾ cup grated parmesan cheese
1 can tomato sauce
1 tablespoon dried oregano
1 teaspoon salt
¼ teaspoon cayenne
1 cup chopped onion


  1. Preheat oven to 375 F.
  2. Brown ground beef over medium-high heat.
  3. For the tomato sauce, add onions to the pan with the ground beef over medium-high heat. Cook until onions are translucent, stirring occasionally.
