From the Kitchen: Veggie Pastry

1 tbsp sunflower oil
2 cloves garlic
1 small onion, chopped
¼ tsp ground coriander
1 tsp garam masala
¼ tsp ground chili powder
¼ tsp ground cumin
2 small potatoes, diced
2 carrots, diced
2 tbsp water
½ cup frozen peas
4 large sheets filo pastry


  1. Heat the oil in a frying pan, then add the onion and cook until it is brown and soft.
