Roasted Lemon Butter Garlic Shrimp and Asparagus

Take your garden asparagus and pair it with shrimp in this Roasted Lemon Butter Garlic Shrimp and Asparagus recipe that is bursting with flavor. This is a favorite that tastes gourmet and appears luxurious, but in reality, is simple and quick to prepare. The shrimp and asparagus tossed with chili flakes and fresh parsley will quickly become a staple in your home.


          1 pound thin/medium asparagus with the ends trimmed

          1 Tbs olive oil

          1 garlic clove, minced

          ½ teaspoon salt

          ¼ teaspoon pepper


          1 ½ pounds medium uncooked peeled shrimp deveined

          1 Tbs olive oil

          3 garlic cloves, minced

          ½ teaspoon salt

          ¼ teaspoon paprika

          1/8 teaspoon pepper

          ¼ teaspoon red pepper flakes

          3 tablespoons chopped fresh parsley

          1 ½ tablespoons lemon juice

          3 Tbs butter


1.       Preheat oven to 400 degrees.

2.       Line a jelly roll pan with foil and lightly spray with cooking spray.

3.       Add asparagus in a single line and drizzle with one tablespoon olive oil.

4.       Add one minced garlic clove, ¼ teaspoon salt and 1/8 teaspoon pepper. Toss until coated evenly before pouring over the asparagus.  Roast the asparagus for four to six minutes, depending on the thickness of your vegetable.

5.       While the asparagus is roasting, remove the tails from the shrimp. After the asparagus is done, remove and push to one side of the pan. Add shrimp and drizzle with one tablespoon of olive oil.

6.       Add two to three minced garlic cloves, ½ teaspoon salt, ¼ teaspoon paprika, 1/8 teaspoon pepper and ¼ teaspoon of red chili flakes and fresh parsley. Toss until evenly coated then line the shrimp in a single layer.

7.       Top the asparagus with one tablespoon of cubed butter, then top the shrimp with two tablespoons of cubed butter. Roast for six minutes or until the shrimp is opaque.

8.       After removing the pan from the oven, sprinkle with lemon juice. Season with additional salt and pepper to taste.
