From the Kitchen: Strawberry Pie

Married for 66 years, Benny’s favorite pie is one Carolyn happily serves!

Strawberry Pie

  • 1 quart fresh strawberries (rinsed)
  • 1 ½ tablespoons corn starch
  • 1 cup sugar
  • 6 ounces cream cheese (softened)
  • 2 tablespoons heavy cream or milk
  • 1 baked & cooled pie shell
  1. Divide the strawberries in half. Mash half of them, set the other half aside. 

  2. In a saucepan over medium heat, combine the mashed berries, corn starch and sugar. Begin cooking and stirring until thickened. Let cool.

  3. Mix cream cheese and heavy cream and spread evenly over the cooled pie crust. 

  4. Cut the remaining strawberries in half and layer on top of the cream cheese mixture. 

  5. Then spread the cooled strawberry mixture on top and chill. 

  6. Cover with sweetened whipped cream. You can even sprinkle a few of the halved strawberries on top for for a little extra eye appeal. Enjoy!
